Pomo or Ponmo
Pomo or Ponmo is the hairy outer covering of the cow skin which is removed when slaughtered for meat.
In Nigerian Cuisine, a delicacy made of processed cow skin which is locally referred to as ponmo or pomo is paired with hot pepper sauce. it is enjoyed by both young and old.
It is very popular and even though it was regarded as a frugal alternative to meat, it is eaten across different societal class levels.
How Pomo or Ponmo is processed
To get pomo or ponmo, the hair from cow skin is removed and tenderized, and there are two methods for doing this, which are:
- boiling and burning/roasting. After skinning the cow, the skin is cut up into manageable sizes and either boiled or burned/roasted.
